This is one of the few dairies still hand making traditional cheddar, and is the only one in the village of Cheddar, The process is as close as possible to the way cheddar was made originally, with the skill and experience of the cheesemaker determining the key decisions. The result is quite different from the ‘everyday’ cheddar we are all used to. Visitors can see raw milk being turned into curd using vegetarian rennet, and then hand cut into the small pieces that will eventually form our prize winning cheese.
